It’s been a hot minute but I’m baaackkk!!! I won’t get into my laundry list of excuses as to why I didn’t post a recipe last week because I know your to-do lists are equally long. Let’s just suffice it to say that my calendar overflow-eth. All good stuff if you’re wondering. I had a fabulous girl’s getaway to Cabo {fun in the sun is always a good thing!}, lots of photography work keeping me busy behind the camera, and a new fall recipe featured on Inspired by This {more on that next week}. Speaking of recipes, these decadent (Gluten Free!) Molten Chocolate Pots are tried and true and I’m so excited to share this gooey chocolatey goodness with all of you. So get your sweet tooth ready friends because these hot pots are literally the easiest and probably the most swoon-worthy dessert you’ll make all year. The only pre-requisite is that you must love chocolate, because well, that’s pretty much all that is in this delectable little pot of deliciousness.
With only seven simple ingredients and a scant twenty minutes in the oven, you’ll think you died and went to chocolate heaven. These Molten Chocolate Pots are pretty enough for even your fanciest dinner party but not so fussy that you can’t whip them up on a random Tuesday night just for fun. Not that I would know {wink, wink}. Either way, this is definitely one of those desserts where you forget about the calories and savor every.single.bite. And then you dream about it. Speaking of dreamy, the white chocolate chips caramelize on the bottom of the ramekin and make for a delicious hidden surprise underneath that perfectly crackled top. Not pictured is the giant scoop of vanilla bean ice cream that fits perfectly on top of the hot pot and gently melts into the rich, chocolatey molten-ness. I’m not drooling….you’re drooling.
It doesn’t get more decadent than this and it’s pretty much a guarantee this dessert will be on repeat at your house from the moment you take your very first bite. The recipe makes four servings so I typically double the batch if I’m serving it at a dinner party. If you know me, you know I’m not a big fan of leftovers but I’ll be first in line for leftover Molten Chocolate Pots. Simply store tightly covered in the fridge and reheat in a warm oven or microwave for 45 seconds and you can live the dream all over again.
